General information

Recipes, times, and temperatures published here are offered as general guidance. Your equipment, ingredients, and altitude will affect the result.

Food safety

Cook to safe internal temperatures: 165°F for poultry, 160°F for ground meats, and at least 145°F for whole cuts of beef, pork, and lamb followed by a 3-minute rest, per USDA guidance. A dish such as our butter-poached lobster or seared scallops should still reach a safe temperature even when served with a tender center.

Refrigerate leftovers within two hours of cooking.

Allergies

Our dishes can contain or contact common allergens including shellfish, dairy, eggs, tree nuts, and gluten. Always check ingredients against your own needs; nothing on this site is medical or dietary advice.

Alcohol
